Ahi Tuna Fall Sushi Tower

Ingredients

TUNA TOWER INGREDIENTS:

  • 1 C. Cooked & Cooled Sushi Rice
  • Spinach, to preference
  • 1 Medium Sweet Potato, Cooked with Skin Removed
  • Tuna Salad Mixture (Recipe Below)
  • Creamy Apple Maple Sauce (Recipe Below)
  • Chives for Garnish

TUNA SALAD INGREDIENTS:

  • 1 Can Safe Catch Wild Ahi Yellowfin Tuna
  • 1 Medium-sized Green Apple, Peeled & Chopped
  • ¼ C. Dried Cranberries
  • ¼ C. Pecans, Chopped
  • 2 Tbsp. Canned Pumpkin
  • 2 Tbsp. Mayonnaise
  • 2 tsp. Maple Syrup
  • 1/4 tsp. Cinnamon

CREAMY APPLE MAPLE SAUCE INGREDIENTS:

  • 4 oz. Low Fat Yogurt
  • 2 Tbsp. Apple Juice
  • 1 Tbsp. Olive Oil
  • 1 Tbsp. Maple Syrup
  • 1 tsp. Apple Cider Vinegar
  • 1/8 tsp. Cinnamon

Tools you'll need

  • 2 Bowls
  • Whisk
  • Spoon
  • Knife
  • Cutting Board
  • Measuring Spoons
  • Plate
  • Small pot
  • Sushi Tower Kit (Optional)

Instructions

  1. Open your can of Safe Catch Ahi Yellowfin Tuna (do not drain!) and add to a small bowl. Flake the fish and mix well with green apple, dried cranberries, pecans, canned pumpkin, mayonnaise, maple syrup and cinnamon.
  2. To prepare the Creamy Apple Maple Sauce, add low-fat yogurt, apple juice, olive oil, maple syrup, apple cider vinegar and cinnamon to a small bowl and whisk until all combined.
  3. Build your tower, starting on the bottom, in this orders. Press your sushi rice into a circle or Sushi Tower mold, then add spinach, ½ of your sweet potato and finally, top with ½ of your tuna salad mix.
  4. Create your second tower with the remaining ingredients.
  5. Drizzle Creamy Apple Maple Sauce over tower!
  6. ENJOY!
