Balsamic Tuna Salad Apple Boats

Ingredients

  • 1 Large Apple
  • 1 Can Safe Catch Elite Tuna
  • 1 Tbsp Mayo*
  • 2-3 tsp Balsamic Vinegar
  • 1 tsp Dijon Mustard or Regular Mustard*
  • 1 Tbsp Minced Red Onion
  • 1 Tbsp Fresh Chopped Parsley
  • 1-2 Tbsp Chopped Walnuts
  • Optional: pea shoots or micro greens for garnishing

  • Apple Corer
  • Knife
  • Bowl
  • Spoon
  • Measuring Spoons
  • Cutting Board
  • Fork

Instructions

  • Begin this recipe by cleaning your apple and use an apple corer or very sharp knife to remove the core.
  • Slice apple in half and set aside.
  • Open your Safe Catch Elite Tuna and flake it in the can to reabsorb those natural juices and nutrients, then add a bowl.
  • Add mayo, Dijon mustard, and balsamic vinegar and mix together evenly.
  • Next, add the minced red onions, parsley, and chopped walnuts and combine well.
  • Divide your tuna salad evenly into each apple half by scooping a portion onto each apple.
  • Top with chopped walnuts, any garnishes and enjoy!

SERVING SUGGESTION

These boats are kid friendly too! Instead of coring the apple and slicing down the middle, core the apple and slice horizontally making small, round “plates” for the tuna salad to sit upon.

This recipe is such a fan favorite at our house, it’s great for a picnic, light snack or doubling the recipe and adding a side for perfect lunch.
