Feta + Olive Sardine Toasts

Ingredients

*Ingredient measurements will vary depending on preference

  • 2 Slices of your favorite bread, toasted
  • 1-2 Cans Safe Catch Sardines packed in Olive Oil
  • Sliced Green Olives
  • Sliced Kalamata Olives
  • Crumbled Feta Cheese
  • Fresh Lemon Juice
  • Salt and Pepper to taste
  • Optional: red pepper flakes for a little spice

Tools you'll need

  • Toaster
  • Knife
  • Cutting Board

Instructions

  • Lay out your toast and gently remove each sardine from the can, placing on toast. *You can leave them whole, as is like I did -or you can gently mash them up with a fork and spoon on top if that’s your preference. But whatever you do, DO NOT DRAIN!
  • Add on your crumbled feta and both types of olive slices.
  • Give a big squeeze of some fresh lemon juice.
  • Top with salt and pepper (and red pepper flakes) and enjoy!

SERVING SUGGESTION

You can leave the sardines whole in this recipe for a fuller toast – or if you prefer, you can use a fork to gently mash up the sardines to scoop over your toast. Either one you choose, these toasts are best eaten right away because the bread will soak up all the oil 🙂 You can also substitute lettuce and make them into wraps or lettuce cups for a lighter approach!
