One-Pan Mackerel Muffuletta

Ingredients

One 8-9 oz. Packet of Pre-Cooked or Instant Rice and Quinoa Blend
1 Tin Safe Catch Wild Mackerel
1/2 C. Shredded Parmesan Cheese
1/2 C. Jarred Muffuletta Mix
Salt and Pepper to Taste
Optional: Chopped Parsley for Garnish

  • Fork
  • Wooden Spoon
  • Measuring Cups
  • Serving Dish

Instructions

  1. Cook your rice/quinoa packet according to the package. Once cooked, add it to a small frying pan or pot. Use a wooden spoon to break up the contents.
  2. Open a can of mackerel (DO NOT DRAIN!) and use a fork to evenly flake the contents. Add them to your rice/quinoa.
  3. Next, add the shredded parm, salt, pepper, and Muffuletta mix to your pan. Mix everything together well, stirring frequently until heated to your liking.
  4. Place your meal in your serving dish (or favorite bowl) and top it with some parsley.
  5. Enjoy!

SERVING SUGGESTION

Serve up your One-Pan Mackerel Muffuletta alongside a bed of fresh, peppery arugula for a delightful contrast in flavors. Drizzle with a light lemon vinaigrette for an added zing. Garnish with a sprinkle of grated Parmesan cheese for an extra touch of indulgence.
