One Pot Tuna Pumpkin Alfredo

Ingredients

  • 2 C. Dry Tri-Colored Rotini
  • 1 Can Safe Catch Wild Ahi Yellowfin Tuna
  • 1 Tbsp. Butter
  • 3/4 C. Heavy Cream
  • 2/3 C. Canned Pumpkin
  • 2/3 C. Shredded Parmesan Cheese
  • Salt to Taste
  • 1 Tbsp. Dried Minced Onion
  • 1/2 Tbsp. Dried Parsley
  • 1/2 Tbsp. Dried Minced Garlic

Tools you'll need

  • Pot
  • Wooden Spoon
  • Measuring Cups
  • Measuring Spoons
  • Strainer
  • Fork

Instructions

  1. Fill a pot with water and bring to a boil.
  2. Add in your pasta and cook for 10 minutes. Strain through strainer and set to the side.
  3. In your empty pot, melt your butter.
  4. Add in your heavy cream, pumpkin, 1/3 cup of parm and stir together
  5. Add in your salt, minced onion, parsley, garlic and stir.
  6. Stir in the other 1/3 cup or parm and stir again. Bring to light simmer.
  7. Open your Safe Catch Ahi Tuna and flake the fish with a fork (DO NOT DRAIN!) Then, add the entire can of Safe Catch into the sauce mixture on the stove.
  8. Dump in your pasta and stir together.
  9. Garnish with some more parm, dried parsley, and pumpkin seeds if you wish! Enjoy!

SERVING SUGGESTION

If re-heating leftovers, you can add another dash of heavy cream or water if you prefer.
