Safe Catch Sushi Bake

Ingredients

3 C. Cooked and Slightly Cooled Jasmine Rice
1 Tin of Safe Catch Sardines (in water):
1 Can of Safe Catch Wild Pacific Pink Salmon
½ C. + ⅓ C. mayo
¼ C. Sriracha
1 Block Softened Cream Cheese
1 tsp. Salt
1 tsp. Onion Powder
1 tsp. Garlic Powder
Juice from ½ a Small Lime
Sesame Seeds to Taste
Zest from Lime
Optional: Kelp, Seaweed Granules, or Furikake to Top

8×8 Baking Dish
Rubber Spatula

Instructions

Preheat the oven to 400°F.
Add your slightly cooled rice to a large mixing dish and add in ½ C. of the Mayo, Sriracha, and Cream Cheese and combine until everything is evenly distributed and creamy.
Add in your Salt, Onion Powder, and Garlic Powder and mix together well again.
Add your can of Salmon and tin of Sardines (do not drain either!) to a separate mixing dish and use a fork to flake both together like you would if making a tuna salad.
Add your flaked Salmon + Sardines to your rice mixture along with an additional 1/3 C. of Mayo and Lime Juice and combine evenly.
Use a rubber spatula to scoop and spread your mixture evenly into your 8×8 pan.
Prior to baking, top with Kelp or Seaweed granules of choice. This step is optional.
Bake in the oven for 10-15 minutes and then remove.
Top your sushi bake with an extra drizzle of Sriracha, some Lime zest, Sesame Seeds or Furikake!

SERVING SUGGESTION

Serve on Nori Sushi sheets or any Seaweed snack with avocado or a side of Coconut Aminos or Soy Sauce for dipping!
This would also be great with Wonton chips, Tortilla chips, or even veggies or crackers!
