One Pan Teriyaki Salmon Broccoli Rice

Ingredients

  • 3 C. Riced Broccoli
  • 1 Can Safe Catch Wild Pacific Pink Salmon
  • 3 Tbsp. of your Favorite Teriyaki Sauce or Aminos (I used Coconut Secret ‘Teriyaki Coconut Aminos’ which makes it Whole 30)
  • Salt and Pepper to taste
  • Small Drizzle of Avocado or Olive Oil
  • Optional: Sesame Seeds for Garnishing

Tools you'll need

  • Pan with Lid
  • Food Processor
  • Measuring Cups
  • Spoons
  • Fork

Instructions

  1. Add a small drizzle of oil to a pan and heat to a medium.
  2. Use a food processor to pulse broccoli florets and create your riced broccoli. Add 3 cups to the pan and stir. Reduce heat a bit and cover with a lid to “steam” broccoli rice. Stir often.
  3. When broccoli rice is cooked to your liking, add 1 tablespoon of Teriyaki sauce at a time and stir it into broccoli rice. Add more if necessary.
  4. Open your can of Safe Catch Salmon (DO NOT DRAIN!) Flake the can with a fork and add your salmon to your broccoli mixture. Stir to combine and heat through.
  5. Top with sesame seeds to garnish and enjoy!

SERVING SUGGESTION

  • Add Teriyaki sauce or Aminos 1 Tbsp. at a time to prevent things getting too watery. You can always drizzle more on top after you serve as well!
  • Use pre-cooked broccoli if you prefer to save on time!
  • Great as a meal, but also makes a fun side.
