Tuna Melt Baked Potatoes

Ingredients

  • 3 Medium-Sized Potatoes
  • 2 cans Safe Catch Elite Tuna
  • 3 Tbsp. Mayo
  • 3 Tsp. Dried Minced Onion
  • ½ Tsp. Garlic Powder
  • Salt and Pepper to taste
  • ¼ C. finely Diced Celery
  • 1 C. Shredded Cheese of Choice
  • Avocado Oil

  • Parchment Paper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Use a fork to stab holes all over your potatoes. Slather them in some avocado oil and add to a parchment paper-lined baking tray. Bake for 40-50 minutes or until tender.
  3. Remove the tray from the oven and gently transfer each potato from the tray to a cutting board. Let them cool while you prepare the Safe Catch tuna salad. *Leave the oven on.
  4. Add your cans of Safe Catch Tuna to a mixing bowl and use a fork to gently flake the Tuna into the liquids. Add mayo, seasonings, and celery and combine well.
  5. Gently cut each potato in half and use a fork to mash the insides down.
  6. Carefully return each potato half to your baking tray and scoop a heaping pile of Tuna to each one.
  7. Top with shredded cheese and return to the oven for an additional 4-5 minutes.
  8. Remove potatoes and top with garnishes of choice, such as diced tomatoes or fresh herbs.
  9. Enjoy!

SERVING SUGGESTION

  • Two cans of Safe Catch Elite Tuna are good for 3-4 medium-sized potatoes, but you can always double or triple the recipe for larger quantities.
  • Potatoes and/or Tuna salad can be made ahead for an easier assembly.
  • I kept my Safe Catch tuna salad simple in the recipe. You can always use your personal favorite recipe here!
  • Omit the cheese or use a dairy-free one to keep this Whole 30 or Paleo!
