Tuna Melt Bites with Sweet Potato Rounds

Ingredients

Filling

  • 1 Can Safe Catch Elite Wild Tuna
  • ½ Cup Mozzarella Cheese
  • 2 Tbsp Scallions or Green Onion
  • 1 tsp Fresh Sage or ¼ tsp Dried
  • 1 tsp Garlic Powder
  • 2 Tbsp Classic Mayonnaise or Keto/Paleo/Whole30 Alternatives
  • 1 Tbsp Harissa Red Pepper Sauce

Topping

  • 2 Tbsp Shredded Parmesan
  • 2 Tbsp Cilantro Leaves

Tools you'll need

  • Medium Mixing Bowl
  • Baking Sheet
  • Parchment Paper
  • Chef’s Knife
  • Cutting Board
  • Measuring Spoons & Cups

Instructions

  1. Knife Work: Rinse sweet potato thoroughly, slice into ten ½ inch disks, oil and salt each, then place on a parchment paper lined baking sheet and bake at 350 Degrees F for 35-37 minutes or until tender (turning once)
  2. Open can of Safe Catch Elite Wild Tuna (Do not drain), flake with a fork in can until all liquid is absorbed by the tuna, then empty into a medium mixing bowl
  3. Knife Work: Chop fresh scallions or green onion into slivered rings, finely chop fresh sage and add to mixing bowl with all other filling ingredients
  4. Remove sweet potatoes from oven and increase temperature to 400 Degrees F, top each sweet potato slice with 1 Tbsp of filling, then return to oven, baking for 10-15 mins or until cheese has melted
  5. Knife Work: Finely chop fresh cilantro and mix with parmesan cheese in mixing bowl
  6. Remove sweet potatoes from oven and top with ½ tsp of parmesan cheese mixture, baking until cheese has browned, about 7-10 mins

Tuna Melt Bites are a hearty appetizer or a great compliment to dinner. Note: let Tuna Melt Bites rest for a few minutes before eating, so that they are still warm but can be eaten easily.
