Aetha Kitson’s Tuna Bites
2 (5 oz.) Cans of Safe Catch albacore
2 TBSP Diced red bell pepper
1/2 TSP Cajun seasoning with a dash of cayenne pepper
1/4 TSP Onion powder
2 TBSP Diced onion
1/2 TSP Garlic minced
1/4 TSP Dill seasoning
2 TBSP Low fat mayonnaise
1 TBSP Plain Greek yogurt
1 TSP Fresh chopped parsley
1/2 Cup Italian breadcrumbs
1 TBSP Panko breadcrumbs
1 TBSP Low fat grated cheese
1 TSP Ghee butter
- Salt and pepper to taste
Open cans of tuna, dump into a bowl, break up and set aside.
In a pan, sautée red bell pepper, onions, and garlic in butter over low-medium heat. Remove from heat and add to the bowl of tuna. Mix in all seasonings except for breadcrumbs and cheese.
Form the tuna into small balls and roll in Italian breadcrumbs. Press into mini square shaped muffin pan that has been previously sprayed with nonstick cooking spray.
Top with panko breadcrumbs and bake at 350° for 20 minutes. Remove pan from oven and sprinkle cheese on top of each square. Return the pan to the oven and bake for an additional 5 minutes.
Cool for 15 minutes, then gently remove each square one by one by flipping the pan upside-down. Enjoy.
