Avocados Stuffed with Mexican Tuna Salad

Prep Time: 10 minutes



  • 1 can of Safe Catch Ahi Tuna (Do not drain)
  • 1/2 Tablespoon of Primal Kitchen Avocado Oil Mayo
  • 1/2 lemon juiced
  • 1/2 cup red onion diced
  • 1/2 cup celery diced
  • 1 large pickle diced
  • dash of salt and pepper
  • 1 package of small sweet bell peppers (about 10)


  1. Empty whole can of Ahi (with liquid) into a bowl and flake with fork
  2. Dice up onion, celery, and pickle into small bits
  3. Add diced veggies, mayo and seasonings to Ahi
  4. Cut tops off small bell peppers, slice in half long ways
  5. Stuff tuna salad into pepper halves
  6. Top off with any desired herb for garnish
