INGREDIENTS

  • 1 can of Safe Catch Elite Habanero Mint Wild Tuna
  • ½ cup uncooked quinoa (white, red, tri-colored)
  • 1 ½ cups water
  • 2 cups greens
  • 1 small avocado, fleshed and sliced

For the mango salsa:

  • 1-2 ripe mangoes, diced
  • 2 roma tomatoes, seeded and diced
  • 1 small cucumber, diced
  • 1 seeded jalapeno, diced
  • ¼ cup diced red onion
  • ¼ cup chopped mint
  • ¼ tsp pink salt
  • 1 lime
