INGREDIENTS

1 (5 oz.) Can of Safe Catch tuna (Don’t drain, no oil or water added)

2 Cups Microgreens

1 TBSP Artichoke garlic aioli

2 TBSP Primal Kitchen Foods Mayo

1 TSP Dijon mustard

3 Hardboiled eggs, diced

1 TSP Capers

3 Mini cornichons, diced

2 TBSP Healthy 8 Veggie Mix

 

On the Side

2 TBSP Artichoke garlic aioli for dressing

  • Additional Microgreens for topping

INSTRUCTIONS

Set microgreens aside, separated onto two different plates.

In a medium mixing bowl, mix tuna, aioli, mayo, mustard, egg, capers, cornichons, and Healthy 8 veggie mix. Make sure that all sauces are incorporated into the mix.

Scoop out even portions using large cookie or ice cream scoop into the center of microgreens. Top with the aioli (portioned and set aside) and top with extra greens.
