INGREDIENTS

1 (5 oz.) Cans of Safe Catch tuna (Don’t drain, no oil or water added)

1/4 TBSP Mayonnaise (Sir Kensington’s or Primal Kitchen)

1/4 Cup Finely chopped celery

1/4 TSP Fresh lemon juice

1/2 TSP Chopped cappers

1/4 TSP Garlic powder

1 1/2 TBSP Chopped chives

1/2 TBSP Chopped Italian parsley

1/4 TSP Smoked paprika

  • Salt and pepper to taste

2 Slices Multi grain bread

2 Slices Cheddar Cheese or Pepper Jack

INSTRUCTIONS

GETTING READY

  1. Preheat Panini maker to “Grill” on “High.”

MAKING

  1. In a medium bowl, add in the tuna and shred with a fork. Add in the remaining ingredients except bread slices and cheese. Toss well and set aside.
  2. Lay down the cheese slice over a bread slice and place on Panini maker, followed by the tuna mixture. Cover with another slice and repeat the process with the rest of the ingredients. Close Panini maker and check on sandwich after 5 minutes to see if the cheese is melted and sandwich is hot.

SERVING

  1. Slice the Panini and serve.
